Exotic wild meat - here are some new ones to try

Game and exotic meats are growing in popularity due to their great taste and health benefits compared to traditional cuts of meat. They're also versatile and easy to prepare as burgers, steaks, chops and casseroles. Let's take a closer look at some new strains you might want to try.

If you have never tasted game or exotic meat, you will be pleasantly surprised by its great taste and ease of preparation. Buffalo meat is probably the most common variety, but many others can also be purchased from specialized online retailers. In addition to their bland flavor, exotic meats are far healthier than traditional cuts of meat like beef, pork, or even chicken. They are exceptionally low in fat, cholesterol and calories.

Here are three new venison varieties to try:

alligator

You may have seen alligator donuts in restaurants in the southeastern United States. Two alligator cuts are offered to consumers, the sirloin and the sirloin.

Alligator is a versatile white meat that can be used as an appetizer or in slow fried or braised dishes. Cook like calamari sautéed or stir-fried, or cook slowly over low heat in a skillet or in a slow cooker. We prefer the latter approach, mixed with a jambalaya and served with rice.

elk

A member of the deer family, elk is an exceptionally tender meat that is very low in fat. It is a grass-fed animal whose meat is very tender when properly prepared.

Usually available as a fillet, rib eye or steak, we like to grill or sauté medium-rare elk. In general, you should not overcook exotic meats because of their low fat content. No need to marinate unless you want a special flavor because the meat is so tender. You can also find moose as sausages or burgers.

Since moose is a very dark red it looks weird when actually medium sized and when it turns pink it's almost well done. We recommend simply reheating the meat by lightly grilling it over a relatively low heat.

wild boar

Wild boar is starting to show up on creative restaurant menus, but don't be intimidated, it's easy to make at home. It tastes sweeter and slightly richer than regular pork and contains less fat.

You'll find wild boar in roasts, empanadas, ribs and sirloin. We recommend searing halfway over high heat and serving with a glass of your favorite wine.

summary

Try these interesting exotic cuts of meat for a new taste experience and a healthy addition to your diet. Alligator, elk and boar are tender, flavorful and easy to prepare. You can find them in a variety of cuts at specialty stores online.
